Being in your 20s and having to change your eating habits is easier said than done. However, after I was diagnosed with MS, I decided to change my life forever. I am not going to die sooner than anyone else (unless a piano falls on my head), therefore, I made a deal with myself that my life needs a fresh and healthy perspective. However, this new relationship with a healthier lifestyle meant breaking up with my other disease – a crazy addiction for eating sweets.
After reading some frightening information about sugar and how bad it can be for the overall health, I had to find a decent substitute. My research was done when I came across Stevia. I found out that this is a herb that originates from Paraguay (Central America), where the natives used it for more than 200 years. In order to produce Stevia packs, manufactures simply boil the herb and extract the liquid that is later on used to create Stevia packs. If you are a coffee addict like myself, you can easily find Stevia packs to make your coffer healthier and sweet. However, I do not use Stevia for my coffee alone, I also use it to bake cakes, muffins and of course cookies!
If you look at the bigger picture, the number one benefit of Stevia is to eliminate sugar and all forms of sugar such as dextrose, fructose and glucose from your diet. Since I have started using Stevia, I’ve lost around 15 kg and I even fee better in regard to my disease, therefore I decided to share my experience and explain to you why you should immediately find stevia packs and integrate them in your daily diet!

Stevia Chocolate Chip Cookies
I eat cookies like Garfield eats lasagne – If you have cookies, I will find ya! I make my Stevia chocolate chip cookies with: 2 cups all-purpose flour, 1 teaspoon sea salt, 1 teaspoon baking powder, 1 egg, half teaspoon white stevia powder, 1 teaspoon vanilla flavouring, 1 cup salted butter, (softened), and 1 cup of sugar-free chocolate chips. Preheat your oven to 180 C and grease the cookie sheet that is inside. Then, take a medium mixing bowl and mix together the flour, salt and baking powder. Take another bigger bowl and mix the eggs, the stevia powder and the vanilla with an electrical mixer. As you are mixing them together, add the butter and continue mixing until you get a texture that is smooth and creamy. Add the flour to the mixture, half a cup at a time, and stir it well. Next, add the chocolate chips and add the butter. Bake them for 25 minutes, until the cookies get that golden brown colour. You will taste the best cookies in your life – trust me!
Stevia Muffins
To make these muffins you will need: 4 organic eggs, 4 teaspoons organic honey, 1 teaspoon Stevia sweetener, 3 teaspoons cream of tartar, 150 grams of spelt and 80g of melted butter and some chocolate chips. Start by putting the eggs in a bowl. Add the 4 teaspoons organic honey and 1 teaspoon of Stevia Sweetener. Stir the mix for 1 minute. Then, put the 3 teaspoons of tartar cream and stir again. Next, you need to add the butter, because everything tastes better with butter! Last but not least, add the chocolate chips and pour into the muffin moulds. You can always put some extra chocolate chips on top of the muffins for decoration. Cook them for 10 minutes at 180 degrees ºC and Voila! – Your healthy Stevia muffins are done!
Instant Stevia Chocolate Cake
There is nothing tastier than a chocolate chip cake, especially if it can be done in only 5 minutes! You will need 2 tablespoons of white whole wheat flour, 2 tablespoons of unsweetened cocoa powder, ¼ teaspoon of baking powder, 1/8 teaspoon salt, 1 teaspoon Stevia, 3 tablespoons of skimmed milk, ¼ teaspoon of vanilla extract and 1 tablespoon of sugar-free chocolate chips. Coat the coffee mug with cooking spray. Then add the flour, cocoa powder, baking powder, salt, Stevia, canola oil, milk, vanilla and of course the sugar-free chocolate chips. Mix them for 1 minute and put it in the microwave for 50 seconds. Let it cool for 5 minutes and then you can serve it! This is my favourite desert that has save d me many times when unexpected guests arrive.
